Refreshing Kale Cranberry Salad

Most salads can be labeled as “refreshing” but this one earns top marks for the energy boost and palate delight. These days, kale is climbing the charts and quickly becoming the darling accessory for salads and other healthy combos. It has already reached the match-made-in-heaven pairing: Quinoa and Kale and I suspect they plan to marry. For keeps!  They might just be crowned the Ken and Barbie of vegetarian pairings.

Kale doesn’t wilt as fast as other leafy greens. Spinach being the weakling of the bunch – pun intended. Followed in short order by lettuce. Kale holds its own and; if anything, it softens up the chew a little bit if left overnight to stew in its own juices. Or to bask in a juicy salad dressing somewhere.

In shines in this recipe and it portrays the kind of sophistication usually found in boutique delis on the popular main streets of any cosmopolitan city.

Ingredients
  • Bunch of kale picked off the middle stem and chopped (I prefer mine chopped medium to small as opposed to large bites. It coats the dressing better and adds more flavor to each bite)
  • ½ cup pumpkin seeds
  • ½ cup almond slivers
  • ½ cup dry sweetened cranberries (the kind you find everywhere)
  • Juice of 2 lemons
  • A drizzle of sesame oil
  • Sea salt to taste
Instructions
  1. Mix all the ingredients above.
  2. Stir well.
  3. Leave overnight if you’d like or serve right away.

 

It tastes even better the next day. The lemon juice infuses the kale with a refreshing citrus flavour and the cranberries are a very compatible burst of sweetness to counteract the tartness.
